This recipe uses the leftover carrot pulp from juicing


1 cup of carrot pulp from juicing
½ tsp Cardamom spice powder
½ tsp Cinnamon spice
1 tsp Vanilla Extract
½ cup of date puree made from soaked pureed dates
½ cup soaked chopped nuts or seeds and raisins

Truffles Coatings: choose from

  • Grated coconut or cocoa powder
  • Melted raw chocolate
  • Chopped nuts


  1. Mix all ingredients together until it forms a soft mass which sticks together when squeezed 
  2. Check taste and adjust if necessary
  3. Roll into little truffle balls
  4. Coat in flavourings
  5. Chill in fridge until firm
