This recipe uses the leftover carrot pulp from juicing
Ingredients
1 cup of carrot pulp from juicing
½ tsp Cardamom spice powder
½ tsp Cinnamon spice
1 tsp Vanilla Extract
½ cup of date puree made from soaked pureed dates
½ cup soaked chopped nuts or seeds and raisins
Truffles Coatings: choose from
- Grated coconut or cocoa powder
- Melted raw chocolate
- Chopped nuts
Method
- Mix all ingredients together until it forms a soft mass which sticks together when squeezed
- Check taste and adjust if necessary
- Roll into little truffle balls
- Coat in flavourings
- Chill in fridge until firm
