Dandelions are a source of many nutrients but the bright, sunny yellow flowers in particular are rich in lecithin. Choline the main component of lecithin. has many functions in the body:
- Aids the digestion of fats,
- Helps keep cell membranes semi-permeable,
- Facilitates cell communication
- Regulates the movement of fats, ions, wastes and nutrients in cells,
Lecithin also helps the nervous system with the production of neurotransmitter acetylcholine. This helps maintain brain functions like memory, learning and sleep. Lecithin as part of the diet may help to stop the progression of degenerative conditions like Alzheimer’s disease.
A good way to incorporate dandelion flowers into the diet is to have them raw in a smoothie.
It's a good idea to team dandelion flower heads with other liver supporting foods like ginger and lemon. Citrus fruits and banana help to balance some of the bitterness and pungency from the dandelions and ginger root.
1/2 cup of dandelion flower heads
1 inch piece of ginger
1 cup of water (or cooled dandelion tea)
- Soak dandelion heads in a bowl of water for a few minutes before rinsing off. This helps any insects come out from the petals.
- Chop everything and processed in a blender until smooth.
While dandelions are in season, boost your lecithin intake and support your brain by adding a few fresh dandelion flower heads to your daily smoothie. Make sure that any dandelions you pick are not cotaminated with pesticides, herbicides and so on.
