I have replaced oats in this muesli recipe with a mixture of pre-soaked nuts, seeds, bee pollen and cacao nibs. I then added a topping of yoghurt for a tasty grain-free muesli alternative.

Breakfast Muesli

Ingredients

1 chopped apple
1 chopped pear
1-2 chopped soaked brazil nuts
1 tsp soaked sunflower seeds
1 tsp soaked pumpkin seeds
1 tsp soaked raisons
3-4 tbsp organic yoghurt
1/2-1 tsp raw honey (optional)
1/2 tsp bee pollen (optional)
1 tsp cacao nibs (optional)

Method

  1. In a serving bowl, combine the chopped apples, pears, nuts, seeds & dried fruit
  2. If using, cacao sprinkle the nibs over the mixture.
  3. Combine the yoghurt with the honey to make a dressing to go over the muesli or just use plain yoghurt as a topping
  4. If using bee pollen, sprinkle it over the yoghurt dressing.

Note

Essential fatty acid supplements such as fish oil, linseed oil etc may be incorporated into this recipe by mixing them with the yoghurt. The bio-availability of  essential fatty acid supplements is improved when combined with a sulphur containing protein like yoghurt.
